This is not reloading related just a proud father showing off. My son harvested this buck last night and we've spent this afternoon working on him. Still a little more to cut then we can make burger and can some up as well. Attachments:

That's a nice looking buck, Congratulations to your son! By the way this section is reserved for hunting related stories and comments.
Curious, how do you prepare meat to be "canned"? I'm having mine made into sausage, steaks and chops then frozen.

JB, As I stated on FB CONGRATS to your son. I'll have to wait for rifle season to try my luck.

My congratulations to the young man.
Are you allowed more than one archery deer in your state?

Give me a place to stand and a long-enough lever, and I will invariably break the lever.

Hi JB- I thought I'd posted earlier, but the computer ate it. You should go up to your son and say "You have learned well, young Skywalker." Nice buck-hope something similar shows up for me this year !

Bob, When we can venison we cut it into approximately 1" cubes. We remove as much "silver skin" as possible and then pack it into 1 quart canning jars. I add a 1/2 teaspoon of salt to each jar and add some water also. The instructions say you do not need to add water because it will make it's own juice but I still add some. Put the lids & rings on the jars and put them in the "Pressure" canner. After the canner builds the proper pressure it should "jiggle ". Once it jiggles you let it go for 90 minutes for quart jars or 75 for pint jars. That's all there is to it. I'm sure you could add any spices or flavoring to the jars as you would want.
When we use it we like to heat it in a frying pan and add BBQ sauce to it and let it cook down. I like to put it over plate of rice or you could just have a sandwich.
Mule,
We are allowed one buck per year but we can also apply for antlerless permits as well. It's very rare to be able to get more than one antlerless permit any more since the number of permits has been reduced because of lower deer numbers, but in some areas of the southern part of the state they are almost limitless but getting access to a place to hunt can be pretty tough.
Well after supper I'll try to finish cutting up the last piece and then we'll be ready to grind hamburger and run the canner, not all tonight though. lol I usually add some beef chuck roast to the burger to add some fat.

JB tell the boy congrats for me. My son gets his first chance at a deer this Saturday during our first youth season. Other than back straps we either can or grind everything else only we also add some pepper and some dried cranberries or blueberries to some of what we can. For fat in our burger we buy bacon ends and bits and grind that up with the deer meat.

Thanks for the information jb. I freeze mine and then grill it on my BBQ (charcoal type). I forget that in your area as in many other areas you don't cook outdoors much from fall through late spring.

John, I see you have a Food Saver. I'm on my second one. Best piece of equipment I ever invested in. Those of you that hunt or fish this is one thing you should invest in.

Well we didn't get any deer yesterday but my son did shoot a coyote. We couldn't find it yesterday so we kept deer hunting and went back today to look around for it. We did find it about 100-150 yards from where he shoot it.

Job well done on the yote. Good that you continued the search for the animal as some would not extend their search to the next day.
